Genasina Sihi (Sweet potato in jaggery syrup)

Hello friends, I am here with yet another authentic Indian dish, sweet dish made from Genasu (sweet potato). It can be served as dessert with breakfast or lunch or evening snack. We can make variety of dishes from sweet potato, savoury and as well as sweet or else boil it and just eat it as it is, that tastes very good. Sweet potatoes have been a part of our regular diet during rainy and winter season. They are rich in important nutrients which can help in staying healthy while one loose weight. Sweet cravings can be fulfilled by this sweet dish. Diabetics can add sweet potatoes to their diet as they are considered as low-sugar food that do not cause an instant increase in blood sugar level. I am making this dish using very less quantity of ghee. My mother used to make variety of dishes of sweet potatoes like veggie, sambar and snacks etc., this is one of those. I made some moderations to make beginners easy. Let’s get started.

INGREDIENTS

  • Sweet potatoes (Genasu) – 500 grams
  • Jaggery (Bella) -250 grams (One cup)
  • Ghee – 1/2 Tea Spoon

PREPARATION

Pick up good quality sweet potatoes from market, wash them thoroughly. You have to wash them very carefully as they grow under the ground having invisible soil around the skin. Peel off the skin and dip them in sufficient water which helps in preventing discoloration of sweet potatoes. Cut them into small pieces and drop them in sufficient water, keep them in water until you transfer them to cooking pan. Crush the jaggery or you can use jaggery powder available in market, keep it in a bowl.

Place a pan or kadhai on stove with medium heat. Add ghee to it and wait until it melts. Takeout sweet potato pieces from water and drain them. Add them to melted ghee, toss them slightly and close the pan with a lid. Allow it to cook for 5 minutes. Open the pan and toss them slightly once again. Add crushed jaggery to it and mix it well. Cook it further for 2 minutes or until jaggery melts. Add half cup of water (around 50 ml) to it and mix it. Allow it to boil for 5 minutes and take off the pan from heat. Keep it closed for further 10-15 minutes to set.

Sweet potato has its’ own flavour that is the reason I am not using any flavour for this dish. If you feel like adding flavour to this sweet dish, you can add cardamom powder or any other flavour of your choice.

Take out the dish to a serving bowl and serve it. It can be served hot or cold, it tastes good in both the ways. Tasty genasina shihi is ready to serve.
